A deliciously rich and chocolatey brownie recipe featuring a big batch made for a birthday celebration. These brownies combine the classic bourbon brick brownies with salted peanuts and frozen peanut butter chunks, ensuring a rich peanut flavor in every bite. Perfect for sharing with friends or family.
 Pre-heat the oven to 180C/160C Fan/Gas 4.
Line and grease a 20cm square loose bottomed tin with non-stick parchment paper.
Place 9 bourbon biscuits in the tin and warm in the oven for about a minute to make separating easier.
Remove the tray from the oven and separate the biscuits, placing them 'bourbon' side down in the tin.
In a saucepan, combine butter, sugar, and syrup over medium heat, stirring until melted and dissolved.
Remove from heat and add chocolate, allowing it to melt for a few minutes.
Stir the mixture until smooth and slightly cooled, then beat in vanilla extract and eggs until glossy.
Gently fold in the flour until just combined.
Fold in broken pieces of extra bourbon biscuits, peanuts, and frozen peanut butter.
Transfer the mixture into the lined tin, covering all biscuits and leveling it off.
Bake for approximately 25 minutes or until risen and firm to touch, but sticky in the center.
Leave to cool completely in the tray before cutting into bricks.
