Bourbon Biscuit Ice-Cream Sandwiches

1: Line a 20cm square tin with baking parchment, overhanging on two sides to make removal easier.

2: Split the bourbon biscuits in half. Select 18 halves and lay them filling side up on the base of the tin. Set aside another 18 for later.

3: Break up the remaining biscuits to fold through the ice cream.

4: In a bowl, place the condensed milk, peanut butter, cocoa powder, and vanilla extract. Beat until combined.

5: Add the double cream and whip until medium peaks form.

6: Fold the broken bourbon biscuits into the cream mixture.

7: Spread the ice cream mixture evenly over the biscuits in the tin.

8: Lay the remaining bourbon biscuits on top in the same direction as the bottom layer.

9: Pat down the biscuits to ensure everything is level.

10: Cover and wrap the tin with foil or cling film and freeze overnight.

11: Once frozen, remove the ice cream sandwiches from the tin using the baking parchment.

12: Cut into individual sandwich slabs and enjoy!
