A delicious and decorative twist on rich tea finger biscuits, paired with a creamy chai spice chocolate ganache. Ideal for a fancy afternoon tea served with finger sandwiches.
Make the rich chai ganache by putting the cream, spices, and tea bags in a small saucepan.
Stir together and heat gently over medium heat until the mixture starts to softly simmer.
Remove from heat and allow the spices and tea to continue flavoring the cream.
While the cream is heating, break the chocolate into small pieces and place in a bowl.
Pour the heated cream over the chocolate in the bowl.
Use a sift to press the teabags into the mix to extract more flavor.
Stir the chocolate and cream together until fully melted.
Let the ganache cool, ideally in the fridge.
Once cooled, whip the ganache until thickened and lightened in color.
Transfer the mixture into a piping bag fitted with a wide flat zigzag nozzle.
Pipe onto the rich tea biscuits before sandwiching them together.
Optionally, repeat the piping process on top and add metallic sprinkles.
