Delicious ice-cream sandwiches made using choc chip cookies, malted milk biscuits, and maltesers, mixed with double cream and condensed milk for an indulgent treat.
Set aside 24 cookies to create 12 sandwich cookies.
Put the rest of the cookies in a sandwich bag or bowl.
Add in malted milk biscuits and maltesers.
Break up the biscuits and chocolates by pounding with a rolling pin to create a mix of crumbs and medium-sized chunks.
In a bowl, place the double cream, condensed milk, and vanilla bean paste, then beat until combined and medium peaks form.
Fold the crushed biscuit mixture into the cream mixture.
Briefly dunk the base of a cookie into the malt drink, then place it on parchment or foil.
Spoon a generous amount of ice cream onto the cookie.
Dunk another cookie and sandwich it on top, pressing down gently.
Repeat with the remaining cookies and ice cream.
Transfer the sandwiches into a container and freeze until the ice cream is frozen.
Once frozen, remove the sandwiches and enjoy.
