Malted Milk & Cookie Ice Cream Sandwiches

1: Line a 23cm square tin with baking parchment, overhanging on two sides.

2: Place 15 malted milk biscuits in 3 rows of 5 on the base, embossed side down.

3: Set aside another 15 malted milk biscuits for the top layer.

4: Put the remaining biscuits in a sandwich bag or bowl and add the cookies and maltesers.

5: Break up the biscuits and chocolates by pounding them with a rolling pin, aiming for a mix of crumbs and medium-sized chunks.

6: For the ice cream, place double cream, condensed milk, and vanilla bean paste in a bowl and beat until combined and reaching medium peaks.

7: Fold in the crushed biscuit mixture.

8: Spread the ice cream mixture over the biscuits in the tin evenly.

9: Press whole maltesers into the ice cream if using, ensuring they're submerged.

10: Lay the remaining malted milk biscuits on top, pressing down gently.

11: Cover the tin with foil or cling film and freeze overnight until solid.

12: Once frozen, remove the ice cream sandwiches from the tin using the baking parchment and cut into individual slabs.
