A super easy no bake cheesecake perfect for celebrating events. Made with party rings, digestives, butter, icing sugar, mascarpone, cream cheese, and cocoa powder, it can be whipped up quickly. Ideal for sharing during the big match!
Grease and line a 23cm loose-bottomed tin with baking parchment.
Blitz the biscuits in a food processor or crush them in a plastic food bag with a rolling pin until they become crumbs.
Transfer the crumbs into a bowl and mix in the melted butter until they are completely coated.
Press the mixture firmly down into the base of the prepared tin to create an even layer.
Chill in the fridge to firmly set.
In a large bowl, combine icing sugar, mascarpone, cream cheese, and vanilla extract. Beat with an electric mixer until smooth and combined.
Spoon the cream mixture onto the biscuit base and smooth it down with the back of a spoon or spatula.
Leave to set in the fridge for as long as possible.
Once set, remove the cheesecake from the tin and place the cut-out football stencil over the surface.
Sift cocoa powder over the cut-out areas and carefully remove the stencil.
Use the end of a wooden latte stick to create the football marking lines.
