Rich Tea Biscuits

1: Make the rich chai ganache by putting the cream, spices, and tea bags in a small saucepan.

2: Stir together and heat gently over medium heat until the mixture starts to simmer.

3: Remove from heat and allow the spices and tea to flavor the cream.

4: While the cream is heating, break the chocolate into small pieces and place in a bowl.

5: Pour the heated cream over the chocolate and press the teabags into the mix.

6: Stir both chocolate and cream together until fully melted.

7: If needed, melt further using a bain-marie or microwave until combined.

8: Leave the ganache to cool in the fridge until it's spreadable.

9: Transfer the mixture into a piping bag fitted with a wide round nozzle.

10: Pipe the ganache onto the rich tea biscuits before sandwiching them together.

11: Allow to firm up fully before enjoying.
